My Little Lunch Dates

When Kids Pack Lunches {Isaiah-Style}

Because I am a progressive mom (and by that I mean, I am slowly progressing to being a moderately reasonably smart mother-figure to the little,  mid-size, and big people around me), I make the kiddos contribute to making their lunches for school.

But, of course, I have to oversee the littlest two...because, otherwise, they'll end up with a lunch like this:
When I gave Isaiah's lunchbox a quick glance yesterday morning, I noticed he had only packed two little rounds of pepperoni and chocolate pudding.  But God bless him for remembering a spoon!


So I made him rethink his packed mid-day meal...and he came up with this:
He added to his pepperoni, half a tortilla, cheddar cheese cubes, and cheese puffs.  All in one sandwich bag, no less, because it saved on baggies (his words), so why not?  So thrifty, this one!  Though he did report to me at the end of the day that his cheese puffs were less than delicious and crispy, as we all could have predicted, except him.  That's an important life-lesson right there.


And not only was he not on his lunch-game, he has his shirt on backwards.


And he could not have cared less.  Nope, he wore it backwards all the day long, without a care in the world.


May we all be more like Isaiah!  Carefree, whimsical, and packing our entire lunch into one sandwich bag, just because!  Even if it means sacrificing our cheese puffs.

my lunch yesterday

So the biggest problem with being obsessed
with watching cooking shows on TV is,
it develops this insanely ridiculous craving for,
well....food.

I know, I'm just as surprised by that as you are.

And because of that,
I find myself being very bored with a sandwich
for lunch...
but instead, dream up things that I could
create for myself for my mid-day meal.

Though it rarely works out,
for lack of time and/or ingredients, and/or little children wanting mac & cheese...
yesterday I put together THE most lovely lunch ever!

Take a look:


Blackened salmon with whole-grain pasta,
fresh tomatoes, lightly topped with an incredible butter-lemon-garlic sauce.


My photography skills are lacking,
I know.
It doesn't look nearly as fabulous as it actually was.

But trust me, this so delicious!



All I did was:

1.  Pan grill some blackened salmon in a little butter and oil.
(Mine was from Sam's Club...frozen in individual portions.)
EASY.

2.  Cook pasta.
(Actually, start the pasta first to time it all just right.)

3.  After salmon is done,
remove from pan & add a couple tablespoons of butter,
then add about a teaspoon of minced garlic.
Cook for just a minute or two,
then add some lemon juice (maybe just shy of 1/4 cup?).
Stir it all up, making sure to scrape the deliciousness on the pan left behind
from the salmon.

Then just plate it all & drizzle your sauce on top.

The sauce is the key to it all!!



And then,
feed your youngsters hot dogs and nachos.

Yes, that's what I did.
I did that.


And I have no regrets.

what lori had for lunch {continued}

There are days that blog post ideas escape me.
So I look around and ask myself,
"Hey, Lori...what could you photograph that could turn into
a blog post?"

And on Wednesday I answered,
"Hey, Lori...your lunch looks pretty yummy today,
take a pic of that and tell the people about it."


So, people...here is what I had for lunch on
Wednesday, February 8, 2012.


Little pizzas made from French Bread
(no, I didn't make the bread...it's pure, unadulterated dead-bread from Walmart)
topped with sauce, artichoke hearts, mushrooms, feta and mozzarella cheeses.
With some Italian seasoning and garlic sprinkled atop.

Very delicious.


Sorry, no step by step photos on how to make this.
I think it's pretty self-explanatory.
