Many of you asked, so here it is.
(I am nothing if not compliant to your requests!)
Fiesta Lime Chicken.
It's my copycat version of Applebee's recipe.
Ingredients you will need:
Chicken breasts and/or thighs
2-3 limes
taco seasonings
salsa
sour cream
shredded cheddar cheese
tomatoes
cilantro
Here ya go:
Marinade some chicken in freshly-squeezed lime juice, for about an hour.
While that's happening,
mix up about half a cup of your favorite salsa, and half a cup of sour cream.
Now we're ready to season the chicken.
I use these two:
But just regular taco seasoning would work just fine, I'm sure.
Season it all up to your taste.
(I went a tad overboard, but that's just me.)
(I rarely do things sparsely. It's something I'm working through with my therapist.)
If you like fresh tomatoes (and if you don't, you're cRaZy), dice some up real quick.
Along with some cilantro.
This will be your topper once your chicken is ready to hit the table.
But first, let's grill up the chicken.
And make sure you have some chickens walking around in the background.
Once your chicken is cooked, glob on the sauce, then some shredded cheddar cheese,
and lastly, squeeze half a lime over the top of it all.
(The last-minute lime gives it a nice punch of flavor!)
Ka-POW!
Let the cheese melt, which only takes a minute or two with the lid down.
Throw your tomatoes on top.
And serve it up with rice and fresh veggies.
And you will be happy for the rest of your life.
