healthy eats

I have a new favorite way to cook veggies!


I literally just load up a big cookie sheet with as many different
vegetables as I have on-hand,
lightly drizzle olive oil all over, plus some salt, pepper & Italian seasoning.
And as you can see in the picture below,
I placed a garlic bulb in the middle of it all.




Then I roasted it all for about 25 minutes at 400 degrees.
(half way through, stir the veggies around a bit.)

THEN, take the roasted garlic & give it a good chop
and stir it into the vegetables.
Mmmmm, good!




Now it's all flavorful, delicious, nutritious, and ready to eat!

What a great idea! We usually stem our veggies or my kids love to dip raw veggies in ranch.

Oh that looks yummy! Is that potatoes in there too? And frozen veggies? See I have to have every.little.detail spelled out for me.....so is that length of cooking for going from freezer to oven?

I love fresh green beans in a pan with a little olive oil, fresh garlic and a bit of lawry's sauce all stir-fried around. Yum yum!

My favorite thing right now is Roasted Asparagus. I take the asparagus and roll it in olive oil, sea salt, lemon pepper and crushed garlic. Place it on a baking sheet sprinkle with parmesean cheese and roast at 375 for 15 minutes, take it out and drizzle a half a lemon over it!! To die for yummy!!

Love this idea and since May 1 begins our month of no junk food, I will need to have many yummy, nutritious dishes on hand.

YUM! Do you have any idea how to cook dried beans to be the same the black beans you can get from a can? I tried using dried and they were mushy and gross. I can't seem to get them right. I wanted to add them to various recipes I have that call for cans of kidney or black beans.

This is our favorite way to eat veggies too! THings my kids usually would turn their nose up at, they LOVE roasted!
I have a great seasoning mix from homemade gourmet that we put on them with a little olive oil and they disappear quickly out of the oven!
