Greek Quesadillas {Meatless Monday}

One of my very favorite go-to quick & easy meals is quesadillas!

I always have homemade tortillas in the freezer OR store-bought in the refrigerator.  That way, I can whip up almost any kind of quesadillas at any time.  They are a favorite around here, let me tell you!

And my quesadilla concoction for this Meatless Monday is, Greek!


In olive oil, simply saute diced onion, peperoncini peppers, garlic, and chopped fresh spinach.


Sprinkle in some Greek seasoning, if you have some on-hand.  It's not a deal breaker if you don't.  Simply season with salt and pepper (and maybe just a tad bit of lemon juice).


On a cookie sheet, layer half a tortilla with some shredded mozzarella cheese, spinach mixture, and feta cheese.  Fold the tortilla over.


Turn the oven broiler on and position rack close to the top.  Once it's good and hot, place cookie sheet with quesadilla  under boiler.  Watch very closely because it will brown quickly!  Flip over and brown the other side.


Once it's all golden brown, all the cheesy spinachy goodness on the inside will be melty and fabulous!
Cut into wedges and enjoy with all your heart.


I'll betcha your whole family will love them.  I can tell you that my kiddos think they're super yummy!

(It's a great way to sneak some veggies into their meal!)


You could most definitely add some chicken if you wanted a more hearty meal.  AND some Tzatziki sauce for dipping.  Oh my, that would be super delicious!


Greek Quesadillas

Ingredients:

(I didn't really measure...so just add in according to your taste!)

Olive oil
Diced onion
Minced garlic clove
Diced peperocini pepper
Chopped fresh spinach (it shrinks down a lot...so use A LOT!)
Greek seasoning, just a dash or two.  Or use salt, pepper, and lemon juice
Mozzarella cheese, shredded
Feta cheese, crumbled
Flour tortillas



Tzatziki Sauce

1 cup plain Greek yogurt
juice of half a lemon
half a cucumber, seeded and finely diced
1 tsp. Greek seasoning (or more if you prefer)
