Oh, dear friends.
I gotta tell you about this simply delicious treat I made yesterday!
Chocolate Peanut Butter Pretzel Bars
(adapted from this recipe)
*Crust*
1 3/4 cup All-purpose flour
1/2 cup whole-grain flour
1 1/8 cup well-crushed pretzels (measure after crushing)
1/2 cup confectioners' sugar
3/4 cup melted butter
Preheat oven to 350.
Line a 17" x 12" cookie sheet with parchment paper.
Combine the dry ingredients, then add the melted butter, mix well.
Press the mixture into the pan and bake for 10-12 minutes.
Let it cool while you make the filling.
*Filling*
3 cups semi-sweet chocolate chips
1 1/2 cup peanut butter, smooth
1 1/2 cup coarsely crushed pretzels, for topping
Melt the chocolate chips in a double-boiler or microwave.
Add the peanut butter, stirring well to combine.
Pour filling on top of cooled crust, spreading chocolate mixture evenly.
Add crushed pretzels to the top.
Place in freezer for 45-60 minutes.
Use parchment paper to list bars out of pan, slice into squares.
Eat them straight out of the freezer,
or at room temp.
Either way, you will not be disappointed!
If ya'll are in the path of the pending snowstorm this weekend,
I suggest you rush out and get all the ingredients
and make these while you're hunkered down.
They will comfort you, I promise.

Oh my--I'd be a little leary of the frozen though--I have to get a root canal Tues.
