Here's what I whipped up for lunch today for the kiddos and me!
Sauteed garlic & spinach in Einkorn pasta,
topped with Parmesan cheese.
It was super yummy!
I simply cooked the pasta,
sauteed about 3 cups fresh, chopped spinach
in olive oil and butter, along with one minced garlic clove.
(Be extra generous with the butter, I'm just sayin'.)
Top if all off with freshly grated Parmesan cheese.
(Salt and pepper as you go along.)
And you know what, I didn't think of this at the time, but some fresh lemon zest and juice
would be SUPER yummy in this.
(I'll do that next time!)
Look how delicious!
(It's amazing to me how the spinach shrinks down to almost nothing.)
(So use more if you like things extra spinachy!)
My kids loved it!
Though the Parm cheese was a little too much for Lu Jo.
Anyway, if you're unfamiliar with Einkorn wheat,
you should really explore its goodness!
If you're gluten-sensitive, this may be just the wheat that won't upset your tummy.

But basically, it's an ancient wheat that hasn't been hampered with over the years.
Lower gluten.

That sounds so yummy. I am gluten sensitive so will definitely check out the noodles. Thanks for the info.
